ingredients
- 1 1⁄4 cups water
- 2 tablespoons butter
- 3 cups bread flour
- 2 tablespoons dry milk
- 2 tablespoons brown sugar
- 1 1⁄2 teaspoons salt
- 1⁄2 cup raisins (optional)
- 1⁄2 cup shredded coconut
- 1 tablespoon curry powder
- 2 teaspoons bread machine yeast
directions
- Add all ingredients to bread machine in order recommended by manufacturer.
- Bake on regular cycle, rapid-bake cycle, or delayed cycle.
- Don't use sweet bread cycle.

Made for ZWT-8 because my DH loves homemade bread more than anything else. This bread smelled divine as my ABM was working its magic & it makes a very lrg loaf which DH was quick to point out w/a smile as the bread rose to the lid of my ABM. He has diet restrictions & raisins sadly are among them, so they weren't used. BUT I didn't want to lose the sweetness you said they'd contribute, so I added 1 extra tbsp of brown sugar & prob will add 2 extra next time. The texture is soft & the bread is good plain or toasted & slathered w/butter. I had some last nite warm & plain right from the ABM & then again this morning toasted. I wouldn't use this lovely bread in a sandwich & compromise its flavours, but I can testify that strawberry jam is great w/the hint of coconut in the bread. Thx for sharing this recipe w/us. :-)
