Sweet Citrus Chicken

- 1 2⁄3 cups hot water
- 1 (6 ounce) package seasoned stuffing mix
- 6 boneless skinless chicken breast halves
- 2⁄3 cup orange juice
- 1⁄3 cup brown sugar, packed
- 3 tablespoons unsalted butter or 3 tablespoons margarine, melted
directions
- Preheat oven to 400 degrees F.
- Add hot water to stuffing mix, then stir until just moistened [or use your own prepared stuffing]. Set aside.
- Place chicken breasts in 13"x9" [or 15"x10"] baking dish.
- Mix juice, sugar & butter until well blended.
- Pour over breasts, then top with prepared stuffing.
- Bake 30 minutes or until chicken is cooked through [170 degrees F].

My family loved this. I was surprised how delicious it was. I just added a little seasoning (Montreal Chicken) to the breasts to be sure there would be enough flavor. It was fine. The stuffing was a little mushy. I'd prefer it crispy, maybe under the broiler. But the family liked it exactly how it was. A success!

Yum -- this is a chicken dish that my son devoured in record time! He loved the citrusy flavor that was in the stuffing (and so did we). I used chicken broth instead of water when making the stuffing, but otherwise followed the recipe exactly. We all enjoyed this chicken dish, Syd -- it's another winner!

A super-easy and certainly a quick to prepare recipe, which is what initially drew my attention to it, that and its citrus bent. I made a few small changes to meet our personal taste preferences. I followed Melvin's Wifey's suggestion of adding some orange and lemon zest, I also added some minced garlic and I added only a teaspoon of brown sugar, which next time I'll omit altogether. I'd recently made KITTENCALS's delicious Apple Sage Stuffing Recipe #79682, so I got some of that out of the freezer, wrapped it loosely in foil and heated it up while the chicken was cooking. As the chicken breasts weren't topped with stuffing, I covered them loosely with foil until the last 10 minutes of the cooking time, when I also removed the foil from the stuffing. Made for Zaar Stars Tag. Great recipe, Sydney and certainly a star: we really enjoyed this! Thanks for sharing it.

We absolutely loved this easy dish. I used the juice of one whole orange, and a half of a lemon. I also added to that a bit of lemon zest and a bit of orange zest. I also couldn't help but throw in a clove of minced garlic. I diced my chicken up first into bite sized pieces and let it marinate in the citrus juice for just a little while to make sure those flavors really got in there. Only a little bit of the stuffing turned out soggy, but most of it was nice and firm with the top of it being a bit crunchy which we really enjoyed. It was not too sweet for us, and tasted similar to orange chicken recipes we love to make. This was super easy to put together and I used Chicken flavored Stove Top. The chicken was perfect after exactly 35 minutes.
