Sweet Chili Salmon With Three Peppers and Udon Noodles

Total Time

Cook 10 mins

This is a meal-in-one, but you can simply make the salmon on it's own and serve with other side dishes. Preparation time does not include marinading time.

Ingredients Nutrition

  1. Clean salmon, and place them in a shallow dish.
  2. Combine the ketchup, soy sauce, lime juice and zest, sugar, oil and chili in a small bowl.
  3. Pour over the salmon and marinate at least 30 minutes and up to 3 hours in the refrigerator.
  4. Remove the salmon from marinade, reserving marinade.
  5. Pan-fry or grill the salmon for three minutes each side, beginning with skinless side first.
  6. Remove salmon and allow to rest.
  7. At the same time, heat the olive oil in the wok.
  8. Add the peppers and stir-fry 5 minutes.
  9. At the end of this time they should be cooked, but not browned.
  10. Add the udon noodles to the wok, along with the reserved marinade.
  11. Stir well to combine with the peppers, and heat through, about 2 minutes.
  12. To serve, place a portion of noodles on each plate topped by a salmon fillet.
  13. Garnish with three pepper slices, one of each color.

Excellent salmon and noodle dish. I added extra chili peppers for a bit more heat and used some fresh udon noodles. Yum! Thanks FlemishMinx!

Delicious salmon which is different from our usual. I doubled the salmon and marinade ingredients (except for the red chili - only used one) and made the peppers and noodles as directed with wonderful results. We will be making salmon again this way soon. Thanks for sharing.

This was a nice tasty salmon treat. I marinated it in the sauce, but didn't fix the noodles. Thank you!
