Sweet Carrot Pudding

  • Butter a 6-cup ring mold well and preheat oven to 350°F.
  • Cream butter and shortening; add sugar, a little at a time, and beat until light and fluffy.
  • Beat in the eggs, one at a time, and add lemon juice and zest.
  • Sift together flour, soda, baking powder, salt and allspice.
  • Stir into butter mixture.
  • Stir in carrots and transfer to ring mold and cover with a buttered round of foil.
  • Set into a baking pan, add enough hot water to come 2/3s of the way up mold and bake for 30 minutes.
  • Remove foil and bake 30 minutes more or until a cake tester comes out clean.
  • Let cool on rack for 10 minutes.
  • Invert onto platter.
  • Serve warm with Gingered Whipped Cream.
  • Gingered Whipped Cream: Beat all the ingredients together until cream holds soft peaks and transfer to a serving bowl.

  1. This is so good, I reduced the brown sugar to only 3/4 cup and omitted the ginger, also I hand squeezed out the excess moisture in the carrots, my DH will enjoy this today, thanks Evelyn!...Kitten:)

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
