Sweet Biscuit Chocolate Roll

A quick sweet snack that is very popular in Greece and there are many different recipes. This is my favorite.

Ingredients

  • 250 g margarine
  • 260 g powdered sugar
  • 44.37 ml cocoa
  • 2 eggs
  • 44.37 ml walnuts
  • 14.79 ml brandy
  • 350 g any kind cookies (I buy a petit beurre biscuits or digestive biscuitscrumbs, graham crackers are suitable)

Directions

  1. Cut by hand the biscuits in crumbs. Chop the walnuts.
  2. Melt the margarine in a small pot and then add the sugar and the cocoa. Stir with a spoon until well mixed.
  3. Beat the eggs and put them to the margarine mixture; stir.
  4. And finally add the biscuits crumbs and the walnuts. Stir until they are mixed.
  5. Cut a piece of parchment paper about 13x18" size. Arrange the cookie-mixture as a roll in the middle of the paper and roll.
  6. Put the roll into the freezer for a couple of hours.
  7. Then remove and store at the fridge. Enjoy!
  8. Cooling time is not included!

excellent and forgiving recipe! I didnt have quite enough biscuits, so I added a few gingernuts:) I used butter instead of margerine, but I would cut down a little in future. didnt last long, should have hidden them.

I won't give this any stars - at least not yet. For some reason, this dessert never set when I made it, so I could never cut it into biscuits. The stuff tasted delicious, though! I really can't imagine what I did wrong, but it must have been my fault, as all the other reviewer rated it 5 stars. I will try your recipe sometime in the future again, Katia.

Great easy recipe; thanks Katia. I used graham wafers and Egg Creation(subtitute for eggs)an it did the job.Thnanks for sharing.
