A very tasty and light lunch! You could add cheese to add more flavor to your sandwich as well.
- 2 cups cubed cooked chicken
- 8 slices mandarin oranges, chopped
- 1⁄3 cup chopped cashews
- 1 1⁄2 cups mayonnaise
- salt and pepper
- 2 plain croissants
- Combine chicken, oranges, nuts, salt and pepper, and mayonnaise until all ingrediants are coated in mayonnaise.
- Cut croissants lengthwise and spread salad on croissants to make sandwiches.
Awesome!! I loved this great combination of flavours and textures. I did add some chopped green onion, and a dash of Chinese Five Spice Powder to the mix. I also only added about 1 cup of mayo as that was all that was left in the jar :) and that was still great. I made easy croissants recipe #37002 for an added touch and everyone was truly impressed! Thanks, Lori! I will make this again when I have important company to impress!
This was so simple to mix up. Very nice to whip up in a jiffy! Using left over chicken thighs cooked in butter, I prepared 1/2 of the recipe. I had not had orange in chicken salad before. It is not my personal favorite fruit in chicken salad, however this was tasty! Very nice recipe!
