Clipped from a magazine years ago. Sort of like a sweet and sour Kielbasa with tang! Quick and easy for those of us one the go.
- 1 lb kielbasa, sliced
- 1 (1 1/2 ounce) package taco seasoning mix
- 1 (14 1/2 ounce) can tomatoes
- 1⁄4 cup peach preserves
- 3 cups cooked rice
- Brown kielbasa in medium skillet.
- Add seasoning mix, tomatoes and preserves.
- Simmer 15 minutes.
- Serve over rice.
This wasn't quite a 5 star recipe for us. Luckily, I did not use the whole packet of taco seasoning (it doesn't need it). The tomato overpowered as well and we couldn't taste the preserves. It was interesting to try something new though! Next time we can tweak the proportions.
This was a favorite of our family when I was a kid. I'm so glad I was able to find it here. It's super simple and is always a crowd pleaser.
I was looking for something "different" to do with sausage and boy did I find it! I just happened to have these ingredients on hand and crossed my fingers hoping my picky family would approve. It worked! Very quick and easy, easy easy. NOT your typical "sausage" dish. Very nice change of flavor and texture. Nice sweet sauce with zingggg!! Great weeknight, hurry up dinner!
