Sweet and Sour Meatloaf

"This is a southern meatloaf. It is the only one I will eat. The sauce makes it the best. Its a little sweet and a little sour. I promise you will love it. It is great on a sandwich the next day with a little mayo and cheese. My husband makes me double this recipe and he would eat it every day if I cooked it! We always fight over the leftovers!!"

directions

  • Preheat oven to 425°F.
  • To prepare meatloaf: Add celery and onions (and any other veggies you like) to beef.
  • Add egg.
  • Add rice, breadcrumbs or cracker crumbs (I've even used potato chips!) for firmness.
  • Open can of tomato sauce put in a little for moisture.
  • Add some salt and pepper and start mushin.
  • I always like garlic in everything so I usually put in a bit.
  • Make into a loaf.
  • Put in a loaf pan or a dish that will leave some room on sides.
  • I like lots of sauce so I put mine in a corning dish with room all the way around.
  • For Sauce: Pour tomato sauce in same mixing bowl.
  • Add all your remaining ingredients.
  • If you like it a little sweeter, add more sugar.
  • A little more sour, add more vinegar.
  • I usually put in quite a bit more Worcestershire sauce.
  • Mix well and pour over meatloaf.
  • Cook covered in oven for about 35 minutes, depending on altitude and oven intensity.
  • Keep checking it.
  • Insert a knife into the middle to check for doneness.
  • This recipe is served best with Mashed Taters and corn.
  • You mush em all together and it’s delicious.

  1. I love this!! Yes it is done with Minute Rice and was perfect! great recipe!

  2. Have always been a big meatloaf lover and tried this recipe just recently and fell in love with it. Thanks for posting.

  3. We loved the flavor and the sauce, but there was one little problem...the rice was crunchy. Maybe Minute Rice would have been better? I will make this again, but either use Minute Rice or leave the rice out completely.

I love to cook!! It eases me and helps me relax. I am always a healthy eater and I can turn any recipe into a low fat version! I have managed to get it down to a science! some however end up on the "cutting room floor" Great healthy foods without loss of flavor....that is always my goal!! All of my recipes are usually measured to taste. Im not big on measuring anything in a spoon or cup. I just eyeball it! My motto is "go easy...you can ALWAYS add more.." I like to experiment with all kinds of recipes. I only use cookbooks to get and idea of what I want. I always end up adding more spices and ingredients!! I am a self proclaimed chef... I have literally been cooking since I was 6. My ma made sure of it!! I am always eager to learn new techniques in lowfat cooking. EMAIL THEM TO ME IF YA HAVE ANY!! I would also like to share some recipes that I have been working on that I am not sure to put on the site just yet cuz im looking for that one lil thing to make it perfect, any opportunity for an idea would be helpful.
