I made this recipe with frozen store-bought meatballs. I had Italian ones on hand, so I used those. Instead of water, I used the pineapple juice. I couldn't justify throwing it away and using something with no flavor. I also halved the recipe and guessed on the juice and vinegar measurements. I was short on time, so I microwaved this for about 15 minutes. I should have stopped earlier to have more sauce and keep some meatballs from hardening in the center. I thought the flavor was good. It was not fantastic, but it was tasty. It was neither too sweet nor too sour. I thought it was perfect for my kids, but my 5 year old did not care for the pineapple. My 2 year old gobbled it down, though! I wonder if this would work with chicken. Have you ever tried it? I might make this again but add green pepper and onions. I would also not skimp on the sauce. The sauce and the cooked pineapple were awesome together!
