Sweet and Sour Fish Sauce

ingredients
- 14.79 ml olive oil
- 2 garlic cloves, minced
- 1 red onion, chopped
- 118.29 ml coconut milk
- 118.29 ml warm water
- 78.78 ml granulated sugar
- 118.29 ml fresh lemon juice
- 1 carrot, shredded
- 118.29 ml fish sauce
- 14.79 ml red pepper flakes (to taste)
directions
- Heat oil in a heavy skillet over medium heat. Cook onions and garlic until onions are translucent and garlic starts to brown, about 5 to 7 minutes.
- Add the coconut milk, water, and sugar. Bring to a boil, stirring to dissolve the sugar. Stir in carrot and fish sauce. Simmer about 5 minutes. Remove from heat and stir in lemon juice and red pepper flakes.
- Cover and refrigerate 1 hour before serving to allow flavors to develop.
