- 2 large cucumbers, peeled and thinly sliced
- 3 green onions, thinly sliced,with 3 inches of green tops
- 2⁄3 cup rice vinegar
- 1⁄3 cup sugar
- Combine all ingredients; marinate for at least half an hour.
- With a slotted spoon, serve as a salad or a garnish.
I halved the recipe and added some red pepper flakes. This was so yummy that I had some spoonfuls of the sauce! Thanks Dancer! Roxygirl
Love this recipe,I used part light and part regular rice vinegar. I may add a Tbl. or 2 of water next time, as the vinegar was a little strong.
