SWEET AND SOUR SAUCE
- 39.43 ml cornstarch
- 118.29 ml sugar
- 118.29 ml red wine vinegar
- 118.29 ml chicken broth
- 14.78 ml dried cilantro (coriander)
- 59.16 ml catsup
- 29.58 ml soy sauce
- 29.58 ml dry sherry
- 2.46 ml salt
- 2.46 ml crushed red pepper flakes
- 566.99 g can pineapple chunks, drained

CHICKEN
- 44.37 ml peanut oil
- 1 clove garlic, minced
- 2 chicken breasts, cut into bite size pieces
- 1 medium onion, thinly sliced
- 1 medium green pepper, cut into thin strips
- 226.79 g snow pea pods, ends and strings removed
- hot cooked rice
directions
- Stir together sauce ingredients.
- Place a wok over high heat.
- When wok is hot, add 2 tbsp peanut oil.
- when oil is hot, add garlic and chicken and stir fry until chicken is cooked (about 3 mins).
- Remove from wok and set aside.
- Pour remaining 1 tbsp oil into wok.
- when oil is hot, add onion and bell pepper.
- Stir fry until vegetables are tender crisp (about 2 mins).
- Add pea pods, stir fry about 1 minutes.
- Return chicken to wok.
- Stir sweet and sour sauce, pour into wok along with pineapple.
- Stir until sauce boils and thickens.
- Serve over hot cooked white rice.

Even though I'm learning to cook, this was tasty and easy to make. My kids and wife gave it an 8 on the taste-o-meter. I made this in a stainless steel frying fan on high heat. The only changes I would make would be to use a little less sugar <there's plenty in the the pineapple> and use a little less red wine vinegar. I would also add some carrots.

Update: My mother, BoxO'Wine passed away on April 23, 2009 after a 2 year battle with pancreatic cancer. She was a wonderful cook and is greatly missed. I am the DD that she has mentioned here quite frequently and have decided to continue her account. I also use RecipeZaar quite frequently as I learned about it from her.
