Sweet, salty and a little bit of crunch.
- 6 cups Baby Spinach
- 1 medium red onion, thinly sliced
- 1 (11 ounce) can mandarin orange sections, drained
- 1⁄2 cup dried cranberries
- 1⁄4 cup roasted sunflower seeds (no shell)
- 1⁄2 crumbled blue cheese
- balsamic vinaigrette dressing (amount to taste)
- Toss spinach with sliced onions, dried cranberries and orange sections. Sprinkle with sunflower seeds and blue cheese. Serve with balsamic vinaigrette.
