From a little Swedish recipe book of mine. Makes 4 servings.
- 8 potatoes, peeled and diced
- 1 onion, chopped
- 2 tablespoons butter
- 1 3⁄4 cups milk
- white pepper
- chopped parsley (optional)
- Brown the potatoes and onion in butter. Season.
- Add the milk gradually and simmer until potatoes are tender, about 15 minutes. Season to taste.
- Garnish with chopped parsley, if desired.
