Swedish Cucumber Salad - Pressgurka

"This cucumber salad goes well with just any kind of meal. In Sweden, strong white distilled vinegar is usually used (12%), which gives the cucumber salad the correct sweet-and-sour flavour and a wonderful fresh and refreshing taste."

  • Cut cucumbers into the thinnest possible slices.
  • Arrange slices in a bowl.
  • Whisk together the white distilled vinegar, sugar, salt, pepper and parsley.
  • Pour over the cucumbers.
  • Place a plate with a weight over the cucumbers to squeeze out the liquid.
  • Chill for 1 hour.

  1. Making with the caraway seeds is what makes this recipe different and Swedish! Loved the mixture of ingredients and will make again. My DH loved this and requested it again soon! If he likes it, then it's a go! Thanks for this one FT!
     
  2. My Scandanavian family's eaten a simpler version of this for years, but I didn't know it was a Swedish recipe. Very light and delicious.

  4. I soaked the thinly sliced cuccumbers in a small ounce glass so they would be curly just for Aesthetic purposes. I scaled down the recipe to 2 servings and was very pleased with the results. Nice sweet and refreshing cuccumber salad.
     
  5. Perfect cukes! Love them. I did sub fresh dill for the parsley (as I am not a huge fan of it). I tried them after about an hour and they were well on their way. Serving later today at a 4th of July party! Thanks FT!!!!

Tweaks

  1. I salted the cucumbers & put them in a colander for 20 minutes to get rid of water. Wash off well. I also used dill instead of parsley and added a bit of red onion instead of caraway seeds. Perfect for side dish.
