Angel-soft filling in a crispy wafer cone.
- 4 waffle cones
- 1 cup whipping cream
- 1⁄2 cup lingonberries or 1⁄2 cup blueberries
- 1⁄4 cup granulated sugar
- Melt sugar in a pan together with lingonberries, and simmer until mixed together, about 5 minutes.
- Allow to cool.
- Whip cream until fairly stiff, fold into lingonberry mix and fill cones, just before serving.
Light and lovely. The crunch of the cones with the smooth, slightly tart lingonberry whipped cream is a very nice dessert. It doesn't taste fattening in the least. :-) I am glad I chose this to make for ZWT3.
