    This is so simple, but looks so pro. I looked at other recipes for puffs, but they seemed very involved. Suzi was the mother of 4 children under 4 (years of age) when I met her, and she always managed to have something special to share from her kitchen. I use these for appetizers and fill with chicken salad or egg salad.

    Directions:

      Heat butter and water to a boil.
    2. 2
      Add flour salt and sugar stir and cook till mixture pulls from pan.
    3. 3
      Cool one minute.
    4. 4
      Spray cookie sheets with non stick spray (like Pam). I also cover the sheets with foil first. This is so the puffs won't stick and get holes in the bottoms.

      Add eggs, one at a time, beating after each until smooth.
    6. 6
      Drop by teaspoon to cookie sheet.
    7. 7
      Bake at 400°F for 20 minutes.
    8. 8
      Open (horizontally) and bake for another 10 minutes, or until dry.

      What fun little popovers. Very quick to make -- something I really appreciate! A few months ago in a mindless frenzy, I gave away my popover pan, and I've regretted it ever since. It never dawned on me to make mini-popovers on a cookie sheet. I made these (unfilled) and served them in place of a dinner roll. We have quite a few left over, and I plan to make mini cream puffs tonight. Thanks for the recipe!

      These are the cutest little things! I recommend using parchment paper, it worked perfectly! I also recommend popping a few of these into your mouth plain. Yummmmmmy. These would be good with sweet OR savory fillings. I used the curried chicken salad. They are very addicting little things. Thank you!
