Susan's All Grain Muffins

High fiber whole wheat,banana,flax seed muffin. This is a recipe that I have worked on for some time and is still a work in progress.

Thanks for posting such a great recipe! This has to be the best bran muffins I have tasted without feeling like I'm chewing on a brick or eating a bunch of sugar. This recipe has great flavor and texture. We have made many batches and this has become a family favorite. Along with the raisins I like to add dried cranberries. Also, some batches I'll add chopped dried apricots, but I cut back to a little less than 3/4 cup of dried fruit. For a stronger banana flavor I freeze the bananas over night.

  1. Preheat oven 400 degrees.
  2. Mash the bananas.
  3. Add all the wet ingredients to the bananas and mix thoroughly.
  4. Add the dry ingredients, except the raisins, to the wet ingredients and mix with electric mixer 2-3 minutes.
  5. Add the raisins last and mix thoroughly.
  6. Spray muffin tins with a grease release (Pam) and fill to the top of muffin tin.
  7. Tap muffin tins on counter a couple of times to settle any bubbles in mixture.
  8. Bake. Enjoy.
