If you enjoy Carrot cake - you'll enjoy this carrot cake with a surprise. Easily put together and the end result is amazing. It's a carrot cake with a Twist, sure to please.

  1. Preheat oven to 350°F Grease and flour 9x13 pan; set aside. Stir together Sugar, spice, baking powder, baking soda, and 1/2 tsp salt.
  2. In large mixing bowl beat butter with electric mixer for 30 seconds. Add Sugar mixture; beat until combined. Add eggs and vanilla, beat until Combined. Stir in apples, raisins, lemon juice and carrots. Stir in four Until combined. Spread in pan.
  3. Bake for 35 to 40 minutes or until a wooden toothpick inserted near centers Come out clean. Cool in pan.
  4. Apple Topping:.
  5. Core 2 medium red cooking apples; cut into 3/4 inch wedges. In large skillet Melt 2 tablespoons butter. Stir in 1/4 cup packed brown sugar and apples.
  6. Cook over medium heat about 8 minutes or just until tender; stir Occasionally. Remove from heat; cool slightly.
  7. Add apple topping to cake.

The unusual combination of ingredients in such a delicious dessert deserves 5* because of the chef's creativity. The warmed apple topping would probably taste great over vanilla ice cream too!

The carrots and apples definetely went well together, and the apples as a topping was super great. It was really moist, which is how I love my carrot cake. This recipe did not last very long in this house, which is something you should be proud of.

I felt like carrot cake and found this recipe. It is *Wonderful* I am impressed how one can come up with a recipe for baking. This has a nice moist texture full of flavor I was little hesitant on the Apple Topping, but it was perfect with this dessert. I made the recipe as stated, only change was added more pecans. Great job chef.... good luck!
