At noon I was hungry, but didn't have time to make a real lunch. Had some stuff left over from previous meals that week, so this is what I came up with. Super quick, and very tasty too.
- 2 cups cooked pasta (shells are good)
- 1 cup diced surimi (I like crab flavor)
- 1 tablespoon fat-free mayonnaise
- 1 dash balsamic vinegar
- salt and pepper
- Mix it all together.
I LOVED this! I thought about adding a tiny bit of hot pepper sauce and decided to just try it with the vinegar and YUM! I had half a lemon and I squeezed that in too and this was amazingly delicious and refreshing! I used those tiny sea shell type pasta. I am glad you got hungry at noon one day Clifford!
