- 1 (1 lb) package fresh turnip greens
- 4 cups water
- 1 slice bacon
- 1 teaspoon seasoning salt
- 1⁄2 teaspoon sugar
- 1⁄2 teaspoon garlic powder
- 1⁄2 teaspoon ground red pepper
directions
- Remove and discard tems from greens. I do this by rollin up leaves, from stem to tip, and slicing along each side of the stem. Coarsely chop leaves.
- Bring 4 cups water and bacon slice to a boil in a large Dutch oven. Add greens, seasoned salt, and remining ingredients. Cook over medium heat 35 to 45 minutes or until tender.

This is a very simple, very basic, low fat, low sugar, and low salt recipe with a broth and resultant greens that are very easy to make. The simple broth tasted so good that even my cat drank my bowl clean (yes, I know it was the tiny hint of bacon grease and odor). It is nutritious and an easy way to get rid of a pile of turnip greens (I used greens from 4 large turnips). My wife did not care for it but she cannot be taken as any kind of judge as she usually rejects all greens unless in a very heavy and unhealthy cheese sauce. I found it very good and so simple to make and I will make it again as I have a truckload of turnips out in the garden. I used recipe #197885 (cut in half) for the bottoms and my wife said they were "delicious" (Slow Roasted Balsamic Turnips) so I'd end up with a "slew of greens" to fix again. Enjoy! Jim in So.
