I hadn't used my clay cooker in the longest time so was intrigued when I saw your meatloaf recipe. I was very happy with the result. The meatloaf and potatoes were moist and flavorful. I sliced the potatoes with a mandolin, used half ground turkey and half lean ground beef. This was a terrific comfort food meal!
Wow! Delicious meatloaf. Would have never thought of using my clay cooker for meatloaf. I made some changes to the actual meatlloaf (used ground turkey and added some Italian herbs and garlic powder) to suit our tastes, but followed your method. The potatoes soaked up the juices and were very flavorful. The topping didn't burn like it does sometimes when cooked in a loaf pan. Will be making this again. Made for Spring 2013 PAC.
I've never used my clay pot for meatloaf. This makes great meatloaf and tasty potatoes. Served with steamed broccoli this was a wonderful, homey meal. Made for PAC Spring 2007
