Very nice. We used an equivalent volume of canola oil instead of butter to make them somewhat lighter. They were very tasty and moist (probably some of the most moist muffins I've made, but once cooled they're good). They didn't really rise that much, so next time I may fill the cups with twice as much batter so they're more muffin looking. Very very filling as well. Thanks!

  1. Preheat oven to 350 degrees.
  2. Mash banana in a large bowl.
  3. Put zucchini in a food processor until finely grated and add to bananas.
  4. Add sugar and slightly beaten egg.
  5. Add the melted butter, walnuts and vanilla.
  6. In a separate bowl mix dry ingredients.
  7. Add the dry ingredients to the wet ones, stir to mix.
  8. Fill greased muffin tray with batter and bake for 20 minutes.
