Super Simple Tropical Dressing
"I love making my own dressings because even if they contain the same amount of fat at least they don't have added chemicals and preservatives. This own is very easy and refreshing. Serve over salad greens. Yummy!!"

- 295.73 ml pineapple juice
- 177.44 ml red wine vinegar (plus an additional)
- 44.37 ml red wine vinegar
- 295.73 ml olive oil
- 4.92 ml pepper
- 9.85 ml salt
- 236.59 ml sugar
directions
- Combine all ingredients and chill.
- Shake well before serving.

This is very tasty dressing. I made it the day before I was going to use it and had to microwave it before I could use it because the oil separated and solidified on top. I really enjoyed the tartness and sweetness - I used it on lettuce with chunks of cheddar and dried blueberries. Thanks for the recipe! -
Made for Summer Comfort Cafe. This was lighty and lovely.Simple ingredients and whisked up in a jiff. I sprinkled a smidge of sesame seeds atop my greens for some more interest.

I am a wife and homeschooling mother of 2 beautiful and rowdy little boys. Recipes have always facinated me and I'll admit that I read more of them than I try. I'm in no way, shape or form a chef. I just enjoy simple down home cooking and comfort foods. We travel all over the country with my husband's job and this has provided a wonderful opportunity to get a "taste" for each region. I have been in 37 states and have enjoyed a little of each one, but Pennsylvania will always be home.
