I bring this to every party i go to, and it is always a hit. Only three ingredients - it couldn't get any easier! It goes great with bread pieces, veggies, pita chips, corn chips, or whatever else! It can also be used as a spread for sandwiches - I love it as a spread with roasted portabellas and goat cheese.

  1. Open and drain the cans of olives.
  2. Put the olives in a blender.
  3. Peel the garlic and put in the blender. You can use more or less, depending on your garlic tolerance.
  4. Pour in the olive oil and begin blending. I have never actually measured the amount of olive oil - just add it until the olives blend easily.
  5. Blend well and enjoy!

Very yummy. I added 2 tbsp. of rinsed capers before processing and used a bit less olive oil. My husband polished this off with carrot sticks and pita chips in no time. Will make it again. Thanks!

I made this exactly per the instructions. Family (especially the little ones) told me they prefer whole olives. This was good with crackers & I did enjoy on taco salad. Thanks for sharing a really simple & good recipe.
