Very easy, very healthy! This is a good side dish for chicken.
- 2 (15 ounce) cans black beans, rinsed and drained
- 1 1⁄2 cups salsa
- 2 tablespoons fresh parsley, minced
- Combine all ingredients in a bowl.
- Chill at least 15 minutes.
I found this to be sort of an odd salad, though it got much better the longer it sat. I used half black beans and half pintos and parsley from my garden.
Super simple is right, it is! I added some avocado as I have some to use up and some onion just because I thought it would be good. A great tasting and healthy dish thats ready in a very few mins. Top marks for ease and flavor. I must say though to be sure and use the salsa that you enjoy the most as it's what makes the dish.
