Moist and heavy, these muffins are kind of bland (which is why I suggest adding mix-ins, like 1/2 cup raisins or pecans). To make them taste really good, frost them with vanilla frosting (although it makes them considerably less healthy).


  1. Beat the eggs until they are light and foamy.
  2. Add sugar, applesauce, and zucchini.
  3. Blend well with spoon.
  4. Mix dry ingredients and add to egg mixture, blend well.
  5. Add optional mix-ins.
  6. Spoon into greased muffin tins.
  7. Bake at 325°F for 20 minutes.
  8. Enjoy!
