ingredients
- 4 chicken breasts
- 15 ounces black beans, drained
- 8 ounces salsa, whatever is your favorite
directions
- Place the chicken breasts in a baking dish.
- Pour salsa and beans over top of chicken.
- Bake in a 350 degree oven for 45-60 minutes, depending on the size of the chicken breasts.
- Serve over rice.

This is pretty funny! My mother used to make this (with pinto beans instead of black beans) in the 70's, when chicken was a super cheap protein choice. We lived in NM so picante salsa was readily available. She also made it without the beans and called it "chicken cacciatore", with a southwestern kick, of course. I've been making it for years myself, a real winner, way more tasty than the simple prep would imply
