  • Place the chicken breasts in a baking dish.
  • Pour salsa and beans over top of chicken.
  • Bake in a 350 degree oven for 45-60 minutes, depending on the size of the chicken breasts.
  • Serve over rice.

  1. I agree with the first reviewer...way more tasty than the simple recipe implies. It was delicious!! I only baked 1 big chicken breast that hubby and I split and I did use the black beans. Will be making this simple dish again! Made for PAC Spring 2012.
     
  2. This is pretty funny! My mother used to make this (with pinto beans instead of black beans) in the 70's, when chicken was a super cheap protein choice. We lived in NM so picante salsa was readily available. She also made it without the beans and called it "chicken cacciatore", with a southwestern kick, of course. I've been making it for years myself, a real winner, way more tasty than the simple prep would imply
