- 4 tortillas (We use corn or Sandwich Petals, as we eat gluten free)
- 1 lb ground beef, cooked and drained
- 1 (16 ounce) jar salsa, choose your heat
- 1 (8 ounce) bag cheddar cheese or (8 ounce) bag mexican cheese
directions
- Preheat oven to 350 degrees F and spray 8x8 pan with cooking oil.
- Brown and drain ground beef.
- Pour 1/2 jar of salsa into beef and warm through.
- Warm tortillas in microwave or in skillet on stove.
- Fill tortillas with meat/salsa mixture and fold tightly.
- Place in baking pan side by side.
- Pour remaining salsa over enchiladas and spread to cover.
- Sprinkle with cheese.
- Bake in preheated oven for 20 minutes, covered, then uncover and bake an additional 10 minutes.
- Serve with sour cream or refried beans.
- Enjoy!
