  • 4 tortillas (We use corn or Sandwich Petals, as we eat gluten free)
  • 1 lb ground beef, cooked and drained
  • 1 (16 ounce) jar salsa, choose your heat
  • 1 (8 ounce) bag cheddar cheese or (8 ounce) bag mexican cheese

directions

  • Preheat oven to 350 degrees F and spray 8x8 pan with cooking oil.
  • Brown and drain ground beef.
  • Pour 1/2 jar of salsa into beef and warm through.
  • Warm tortillas in microwave or in skillet on stove.
  • Fill tortillas with meat/salsa mixture and fold tightly.
  • Place in baking pan side by side.
  • Pour remaining salsa over enchiladas and spread to cover.
  • Sprinkle with cheese.
  • Bake in preheated oven for 20 minutes, covered, then uncover and bake an additional 10 minutes.
  • Serve with sour cream or refried beans.
  • Enjoy!
