Healthy and very easy to make. Very tasty and you can vary the recipe so that you don't seem to be making the same dish all the time. The recipe says for 2 servings but you can easily add 2 more breasts without upping the ingredients. You can take the remaining broth, thicken with cornstarch and serve over rice/potatoes.
- 1 ounce dried Italian salad dressing mix (1 envelope)
- 1 cup fat-free chicken broth
- 2 chicken breast halves
- Place chicken in slow cooker.
- Mix broth and seasoning mix. Pour over chicken.
- Cook on high for 3 or 4 hours or until chicken is done.
I made this on our recent camping trip with our 1 1/2 qt crockpot. I wanted to have chicken, but it was too hot out even to grill! I put in 3 chicken breasts and this cooked through the afternoon in our trailer and was perfectly done in time for dinner. So moist and tender! I think I will always make my chicken in the crockpot from now on! Thanks for such an easy, and tasty, recipe!!
This was, like it says super easy, but also great tasting. I had about six chicken breasts so I used the whole can of broth. I think I could have used much less broth so next time I will try it with just a 1/2 cup or so. I can't wait to use the leftovers in a wrap or something. I also cooked it on low for about 7 or 8 hours.
