I had a salad one time with oranges in it. It was a big hit with me, so I made this salad up & put everything I love into it. Feel free to play with it, (the recipe, not the food).

Ingredients Nutrition

  • 3 cups baby spinach leaves
  • 3 cups mixed greens
  • 1 carrot, shredded
  • 2 tomatoes, sliced
  • 12 cucumber, sliced into bitesized chunks
  • 2 mandarin oranges, divided into sections
  • 12 cup slivered almonds

Directions

  1. Toss all ingredients together, add a nice vinaigrette,& serve.
