  1. The muffins were absolutely wonderful. I nibbled on one fresh out of the oven then woke DS up to try one as well and after tasting it he didn’t complain one little bit about the rude awakening. I followed the ingredients to the letter but messed up rather badly on the method. As I was getting my blender jar down I dropped it on the ceramic floor and that was the ignoble end to it. I used instead the food processor to pulverise the orange and to lightly chop the raisins and walnuts. I had three questions in mind when I initially read the recipe. a) How would they taste with a WHOLE orange incorporated in them? b) Would the recipe actually make sixteen big muffins? c) How would the recipe work done completely in a blender? We know the answer to the first...absolutely delicious!!! The answer to the second for me was ...only a dozen large ones (could have had something to do with the mixing method) And the third will remain a mystery until such a time as I replace the blender jar. Thank you Christina (prepared for COOKOUT Cookathon July 1st – 4th 2002)

  2. I ran out of muffin papers and couldn't get to my muffin tins so I poured the batter into a loaf pan and baked it for about 50 min. The taste is wonderful. I received many compliments on this recipe today. DWbreadbaker

  3. These muffins are great! My whole family loves them! I left out the raisins b/c we were out, and I added chocolate chips to half of them. Yummy!

  4. My family and I all loved these muffins. I didn't change a thing and they turned out great.

  5. So sorry to be the first one to rate this other than a 5, but I have to be honest and share my comments. I followed the directions to a -T- other than using 1/2 c ww flour, along with the other c of flour being white. They seemed to be really oily, I'm assuming because of the orange peel- it did add a nice flavor, although maybe a little too strong of one. They didn't seem to smell too good coming out of the oven- reminded me of the smell of orange cleaner. Maybe it was a "marginal" orange, although I tasted it before I blended it, and it seemed to be fine. I will try this one more time, and I promise to report back if it turns out differently.

  1. WOW! What a great recipe! These are really wonderful. Great flavor. I have tried a different recipe EVERY day this week looking for a great muffin. This is the one!! I love the WHOLE orange business. The only changes I made were substituting applesauce for the oil & brown sugar for the white sugar. MAGNIFICENT!!!

  2. I made this recipe as a snack cake in a 9 x 9 pan instead of as muffins--worked great. I did need to cook it about 30 minutes. I also took out all of the fat, replaced the oil with apple sauce, and the egg with 2 egg whites. And used only 1/2 cup sugar, and made 1/2 cup of the flour whole wheat. And used hazelnuts because I didn't find any walnuts. It was fantastic. !!! Same recipe but no fat. The whole orange, peel and all is a great idea for lots of taste. This could be plan, or with a powdered sugar glaze with orange juice in it. I will be making this again and again!
