      Cut orange into 8 pieces.

      Put cut-up orange (The WHOLE orange, orange juice, egg and oil in blender).

      Blend until smooth.

      Add flour, sugar, baking powder, baking soda and salt.

      Add raisins and nuts.

      Blend just until mixture is mixed.

      Pour mixture into muffin tins and bake at 375F for 15-20 minutes.

      The muffins were absolutely wonderful. I nibbled on one fresh out of the oven then woke DS up to try one as well and after tasting it he didn’t complain one little bit about the rude awakening. I followed the ingredients to the letter but messed up rather badly on the method. As I was getting my blender jar down I dropped it on the ceramic floor and that was the ignoble end to it. I used instead the food processor to pulverise the orange and to lightly chop the raisins and walnuts. I had three questions in mind when I initially read the recipe. a) How would they taste with a WHOLE orange incorporated in them? b) Would the recipe actually make sixteen big muffins? c) How would the recipe work done completely in a blender? We know the answer to the first...absolutely delicious!!! The answer to the second for me was ...only a dozen large ones (could have had something to do with the mixing method) And the third will remain a mystery until such a time as I replace the blender jar.       I ran out of muffin papers and couldn't get to my muffin tins so I poured the batter into a loaf pan and baked it for about 50 min. The taste is wonderful. I received many compliments on this recipe today. DWbreadbaker

      These muffins are great! My whole family loves them! I left out the raisins b/c we were out, and I added chocolate chips to half of them. Yummy!
