  • Bias-slice carrots crosswise about 1/2" thick.
  • Place in a saucepan containing 1" of boiling, salted water.
  • Cover pan and cook until just tender; about 10 to 20 minutes.
  • Drain.
  • Meanwhile, in a small saucepan, combine sugar, cornstarch, ginger and salt.
  • Add orange juice and cook, stirring constantly until thickened and bubbly.
  • Boil 1 minute and remove from heat.
  • Stir in butter.
  • Pour over hot carrots, tossing to coat evenly.
  • Garnish with parsley and orange twist, if desired.
  • Enjoy!

  1. Have made this recipe for over 30 yrs. This is how I got my daughters to eat carrots, and now my grandsons love them also.
     
  2. I really like this recipe. It has a nice zippiness to it. Makes boiled carrots a little more appetizing.
     
  3. Sweet, tender and fruity! I used a whole orange that I blended in the blender for the juice. Then added the juice to the brown sugar, cornstarch, ginger and salt in a microwave safe dish and cooked it for a couple minutes till thick. Stirred in butter then added it to the carrots.I garnished with slices of chili.
     
  4. Recipe was simple, but my family really didn't care for it.

Tweaks

  1. I substituted pineapple juice and added 1/4 cup pineapple tidbits to recipe. Yummy.
