Sunset Salad

"I used to eat this all the time as a kid and just ran across the recipe again in a church recipe collection cookbook. I'm not a huge fan of gelatin salads,(they always sound kinda funky) but this one, I like. A little tart, a little sweet."

  • Dissolve jello in boiling water.
  • Add pineapple, with juice, and lemon juice.
  • Add carrots.
  • Chill until set.

  1. This was very tasty and refreshing. I wanted a cool salad option to serve with my Easter meal, and this fit the bill quite nicely. My daughter especially got a kick out of this salad that seemed like a special dessert treat. Thanks for sharing a bit of your family traditions with this recipe.
     
  2. Very Good! We have made this for years, but we always made it with green Jello. It was my son's fave when he was just a little guy; he still enjoys it even tho he is ** years old! On the other hand, my daughter says GREEN Jello is a gross abomination and will not eat it. Even when it was the first thing she was given to eat after 3 days of no food and gall bladder surgery! Oh well, HE always finished up all the veggies and SHE always ate all the fruit.
     
  3. First let me say, this is a beautiful salad, the colors just "pop". Secondly, we loved it. My kids looked at me sorta strange when they realized it was carrots in it but once they tasted it they all went for seconds. I will make again, its so easy to prepare and not alot of ingredients. Thank you for sharing this recipe with us.

  5. I really liked this Kim! I also like the name because of the colours. You can't really taste the carrot in this so it would be a good way to sneak them in for kids. Also, it would also be nice with pineapple tidbits if you like "chunkier" food. Made for PRMR. Thanks! :)
