"I know this seems simple, but it took me a long time to learn how to make these without breaking the yolk, so I thought there may be some beginners who may have the same problem."

  • Melt butter in a heavy skillet and heat until hot enough to sizzle a drop of water.
  • Break one egg into a saucer; carefully slip egg into skillet. Repeat with other egg.
  • Cook eggs over low heat until whites are firm and yolks are soft, or to desired degree of doneness; season with salt and pepper.

  1. Tried your saucer idea and it works! Haven't broken a yolk since. Thanks for the great idea. Just before the egg is done I sprinkle the top of the egg with kosher salt and freshly ground pepper and put a lid on it to cook the top of the egg a little, white only, for just a few seconds, still leaving the yolk runny. Yum.
     
  2. Never thought of using a saucer or bowl to "first" break the egg over. Very nice tip..thanks
     
  3. I agree, cooking an over-easy egg without breaking the yoke is a challenge! The only thing I would add to this would be....make that a non-stick skillet.
