  1. Preheat oven to 350°F.
  2. Boil potatoes for about 10 minutes; drain.
  3. In a large bowl, combine cheese spread and milk.
  4. Stir in potatoes, ham, vegetables, and onion; season with salt and pepper.
  5. Pour into 13x9-inch casserole dish.
  6. Bake, covered, for 45 minutes, stirring occasionally.
  7. Sprinkle shredded cheese and cracker crumbs on top.
  8. Bake, uncovered, until cheese is melted.

What a great dish...This was quick and very easy to put together, and very satisfying. My family throughly enjoyed it. It didn't specify what type of cracker crumbs, so I used Ritz Crackers. I think someday I will try it with a pepper jack cheese to give it an umph too. Thanks!!
