This is easy-peasy and makes a delicious light dinner! The curry is very mild and creamy so add cayenne or a chopped hot pepper if you prefer a spicier meal!

  1. Boil, peel and slice eggs lengthwise into halves.
  2. Melt butter in pan
  3. Saute onion and until soft.
  4. Mix in flour, curry powder and salt.
  5. Stir till smooth.
  6. Slowly add milk, stirring as added until thickened.
  7. Add eggs and cook until heated through.
  8. Top with chopped corriander.
  9. Chopped apple, raisins and/or banana can be added to the sauce or served as a garnish.
  10. Serve with plain steamed rice.
