I have never made an oven pancake before. How cool!! The pancake puffed up, then sank to make a golden brown shell. I got to use broccoli and tomatoes from my garden. It was delicious. I used a little more salt and pepper than called for. I cut it into wedges and served. A lovely meatless meal that was sooo good. Thanks keen5 for recommending it.

I have made this a couple of times and it is a really cool recipe. The way the pancake puffs around the veggies is fun. I have varied the veggies that I include simply based on preference. The pancake itself is so simple to assemble and the outcome is really impressive.
