  1. Pour oil to the depth of 2 inches in a Dutch oven; heat to 350°.
  2. In a bowl, combine flour and next 3 ingredients.
  3. Stir in chopped apple, tossing gently to coat.
  4. Make a well in the center of mixture.
  5. In another bowl, whisk together the milk, vanilla, and eggs until blended.
  6. Add to flour mixture, stirring just until dry ingredients are moistened.
  7. Drop batter by heaping tbsp into hot oil.
  8. Fry fritters in batches, 1-2 minutes on each side or until golden.
  9. Drain on paper towels.
  10. Sprinkle fritters with powdered sugar.
