This was an extremely quick and fun way to cook a scrambled egg. I had to microwave the egg longer to get the desired consistency. Next time, I will toast the muffin and assemble everything separately - as the finished sandwich was slightly too soggy out of the microwave.
I did this a little different. I made this in part of OAMC so I prepared 6 of these. I cooked the eggs in the skillet instead, and used peach preserves since I needed peach for another Zaar recipe. A twist on the basic EggMcMuffins-Scrambled instead of fried and of course the preserves made this a wonderful addition.
My husband liked the sweetness the apricot preaserves added to the sandwich. Very quick and easy. Thanks Chef#228980 Bullwinkle
Such a simple prep for a hearty morning sandwich. I used orange marmalade and loved the way the sweetness married with the saltiness of the cheese and ham. I also used a whole wheat English muffin and toasted it prior to putting the sandwich together. I did have to adjust the cooking times slightly due to variances with my microwave.
