Sun-Dried Tomato Spinach Rice Pilaf

This is fabulous with fish and/or chicken. It can easily be made vegetarian by using vegetable broth instead of chicken. It's quick, easy and was a hit with my family. Hope you enjoy.

  1. Heat olive oil over medium heat.
  2. Add minced onion and garlic and saute for 2 minutes.
  3. Add the sun-dried tomatoes and saute another minute.
  4. Add the Jasmine rice and saute one minute.
  5. Add the salt, pepper, bouillon cubes and water and stir.
  6. Cover and bring to a boil.
  7. Reduce heat when boiling and simmer 15 minutes. (No peaking! Do not remove the lid while cooking!).
  8. After 15 minutes, remove from heat and stir in the fresh spinach and lemon juice.
  9. Cover and let steam 15 minutes. Voila!

Yum, this was great! I served it with salmon, but I think it would go well with chicken too.

I made this for company and was very pleased with the taste. Very easy to cook. I used chicken broth instead of the cubes and water and I used the long grain rice. I also used baby spinach which worked well. I would definitely make this again.
