  1. Cover sun-dried tomatoes with boiling water for 10 minutes.
  2. Blend first 6 ingredients. Add vinegar, tomato paste, crushed tomatoes and red wine, and process. Stir in olive oil and Parmesan cheese. Season with salt to taste.
