Summit House in Brea CA gives their recipes out on postcards. Their food is excellent.
- 1 lb fresh cranberries
- 3 oranges, zest of
- 3 diced orange sections (about 1/2 cup)
- 1⁄2 cup orange juice
- 1 cup sugar
- 1⁄2 cup water
- Cook water and sugar until reduced to a caramel, add cranberries, zest (grated outer layer) from 3 oranges, 3 diced orange segments and 1/2 cup orange juice.
- Cook until cranberries are tender- about 20 minutes.
- Let set.
This was a such a big hit last year, that I will be making it again this year. I did find that it was better the following day, so plan to make a day before you use it. No sugar adjustments necessary, it should be somewhat tart and not overly sweet.
This was really not very good. Double the sugar (at least) and cut the orange zest in 1/2. It was very sour and tart, and had way too much orange zest in it. The overwhelming flavor was orange, not cranberry. It was beautiful and set up nicely, but no one could eat it. I am going to try it again, however, but with the changes above, just because it was so pretty!
