Summertime Salsa

- 1 (19 ounce) can black beans, rinsed and drained
- 1 cup roma tomato, seeded and diced
- 1⁄2 cup red onion, chopped
- 1⁄3 cup green onion, sliced
- 1⁄4 cup lime juice
- 1 mango, chopped
- 1 tablespoon fresh cilantro, chopped
- 1 tablespoon of fresh mint, chopped
- 1 teaspoon garlic, finely diced
- 1⁄2 teaspoon salt
- 1⁄3 cup whole toasted flax seed
directions
- In a bowl, combine beans, tomatoes, red and green onions, lime juice, mango, cilantro, mint, garlic, and salt. Mix well.
- Cover and refrigerate for 2 hours. Just before serving, stir in flaxseed.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
