This is a great summer dish full of veggies - you can also use fresh tomatoes.
- 2 slices bacon, diced
- 1⁄4 cup diced onion
- 3 cups small zucchini, sliced
- 1 (28 ounce) can stewed tomatoes
- 1⁄8 teaspoon garlic salt
- 1⁄8 teaspoon salt
- 1 dash pepper
- 1 teaspoon butter
- Sauté bacon and onions till crisp and clear. Drain off grease and add the remaining ingredients.
- Simmer until zucchini is tender about 10 minutes.
- You can substitute ½ lb hamburger for bacon.
