- 473.18 ml zucchini, diced or sliced
- 236.59 ml fresh mushrooms, sliced
- 236.59 ml fresh tomato, diced
- 236.59 ml vidalia onion, sliced in rings
- 4 clove garlic, crushed
- 1.23 ml freshly ground cracked pepper
- 1.23 ml salt
- 29.58 ml olive oil
- 236.59 ml swiss cheese or 236.59 ml mozzarella cheese, grated
- 29.58 ml parmesan cheese
directions
- Heat the olive oil in a large skillet or dutch oven.
- Add the zucchini, mushrooms, onion and spices and saute until tender.
- Add the tomatoes and mozzarella cheese and continue cooking until cheese is melted and tomatoes are warmed through.
- Top with the parmesan cheese and serve.
