Summer Tuna Paninis

A delicious summer sandwich done on a panini grill.

Ingredients:

• 2 (120 g) cans tuna , drained
• 1⁄3; orange bell pepper , chopped
• 1⁄3; red onion , chopped
• 1 stick celery , chopped
• ¼ cup cheddar cheese , shredded
• 3 tablespoons sour cream
• 2 tablespoons mayonnaise
• ½ teaspoon curry powder
• ¼ teaspoon black pepper
• ¼ teaspoon salt
• 1 teaspoon cayenne
• 4 slices swiss cheese
• 8 slices rye bread or 8 slices multi-grain bread

Directions:

1. mix all ingredients together, top mixture with slices of swiss cheese then spread on bread to make 4 sandwiches.
2. heat on panini grill, 3 to 5 minutes until cheese is melted.
