This is a beautiful salad suitable for a light dinner. I would feel very comfortable serving this to guests.
- 4 cups spinach leaves
- 4 cups mixed salad greens
- 1 (15 ounce) can mandarin oranges
- 8 ounces sugar snap peas, halved
- 2 -3 cups cooked chicken, cut into 2 ",cubes
- 1⁄2 cup pecan halves, toasted
- raspberry vinaigrette dressing, to taste
- Toss all ingredients in large bowl.
- Spoon onto 4 serving plates.
- Great served with a raspberry vinaigrette.
