Had a box of oval tomatoes, slightly larger than grape, which were no on the banned list. Cut them in half, had LOTS of fresh basil in my herb barrel which I chiffonaded, and 2 slices of fresh mozzarella - diced. Broiled in toaster oven for about 8 minutes, and used a heavy hand with balsamic. This was a nice side to crab cakes and egg-potato salad. Thanks for posting.
Yum! This recipe couldn't be easier to prepare; and it's a wonderful way to use the extra tomatoes and basil from the summer garden. My teens loved this with sliced french bread while I finished dinner!
